How this table was read. All four gaps hang from the three-meat Sancocho and from Sunday midday, the house's highest-occupancy daypart: a gap about a low-rotation dish would have entertained without moving the sales mix. Two that sounded fine were dropped because they touched no real consumption reason —the plantain supplier and the stove brand—: the owner told them without energy, the first sign that nobody else cares. The three open differently on purpose: one with an hour, one with a warning, one with a quantity. Three openings built the same way read as a mould when played back to back, and the mould shows before the content does.
