② The carry-over rule (whatever stayed unticked)
Nothing gets erased and nothing gets ticked out of pity. An item that ended the day open is copied onto tomorrow's sheet with three fields and no more:

The alarm: if the SAME item carries 3 days running, it stops being an oversight and becomes a design fault — the hour is wrong or the owner can't carry it. With 2 locations the carry-over also says which one: three weeks falling in the same kitchen isn't a people problem, it's the hour that was given to them. That's the only argument worth Monday's meeting; everything else gets ticked and the day moves on.
