What does NOT happen in September, and why: the 2-for-1 on Bandeja de la casa —highest rotation, thinnest contribution margin at 41% food cost: filling the room with it drags operating margin down, the exact opposite of the goal—; world tourism day, which feeds no bet; the food-challenge video, nothing like the house's plain-spoken tone; pushing the delivery platform, whose commission eats what the bet earns (own delivery does get in); and a third bet on breakfast, which fits in your head, not in the hands of 24 people split across two rooms. Shots per bet: the trout hitting the pan with the garlic barely golden (3), the plate with patacón shot from above (2); the sancocho served in the clay pot for the whole table (3), a hand ladling the broth with the corn whole (2). On camera: the cook who has been here all 6 years, unscripted, saying what time the sancocho goes on.
