What it does and what you get

  • The monthly plan of almost any restaurant is a list of observances pulled off the internet: coffee day, friendship day, pizza day.
  • Thirty boxes get filled and none of them moves Tuesday occupancy.

What does NOT happen in September, and why: the 2-for-1 on Bandeja de la casa —highest rotation, thinnest contribution margin at 41% food cost: filling the room with it drags operating margin down, the exact opposite of the goal—; world tourism day, which feeds no bet; the food-challenge video, nothing like the house's plain-spoken tone; pushing the delivery platform, whose commission eats what the bet earns (own delivery does get in); and a third bet on breakfast, which fits in your head, not in the hands of 24 people split across two rooms. Figures are illustrative; targets get recalibrated with Sazón de Origen's real numbers in month two.
