Ranked by money, the family that leaves the most is beer: 7,390,000 a month. Ranked by percentage, the first would be coffee at 14.1 % — and coffee is fourth in cash. Pushing coffee instead of beer because it "costs less" would have cost the house 2.4 million of margin a month. It is the mistake bars always pay for, and it is why this table is sorted by the last column and not the fourth.
The leaking family has a name: wine, 40.0 %. It costs more than the kitchen, which runs at an actual 35.0 %. It is the only one of the five that gets re-costed before being pushed, and the global 29.2 % had it perfectly hidden.
Ten glasses of the house wine were weighed during service, unannounced. The recipe says 150 ml and the average glass came out at 190 ml: 27 % over-pour.

That is 362,000 COP a month going over the rim of the glass. It needs no new software and no professional bartender: it needs marked glasses and a Sunday count.
The same weighing on the best-selling cocktail gave 58 ml where the recipe calls for 45: 229,000 COP a month. It is real and it is small, and saying so is part of the job — whoever chases the 229,000 and leaves the 362,000 picked the wrong leak.
And one that is not the bar's fault: 4,100,000 of the month's beverages go out through the delivery platform. There the leak is not the pour, it is the commission.
SUPUESTO: the platform commission is taken at 24 % because the contract was not brought to the session; the figure came from the owner's memory. That is 984,000 COP a month the bar invoices and does not collect. If the real settlement said 18 %, it would be 738,000 and beer through the platform would stop being the worst business in the house. Before moving a single platform price, pull the statement: here the difference between an assumption and a fact is 246,000 COP a month.

Which of your data it uses
This assistant works with 10 of the 23 fields in «My Restaurant», among them Business type, Cuisine or concept and City and country. It does not ask out of curiosity: these are what make the answer speak about YOUR scale instead of an industry average — the same calculation on a business of another size returns a number you cannot decide with.
