What it does and what you get
- With one location, inventory is a stockroom; with two or more, it becomes a system of connected vessels almost nobody connects: one store buys the beef the other has in excess, Norte's waste doubles Centro's with no one comparing, and each counts its stockroom whenever it can — so the network's figures are never from the same day.

The owner asked this: «I have two locations. Norte bought beef loin last week and Centro let the loin it had expire. Each one counts its storeroom whenever it can.»
The pairs come from EACH location's sales — copying the big location's fills one storeroom and empties the other.

The network verdict: two crossings call for a transfer, not a purchase. Loin is over at Norte (12 kg above its maximum) and short at Centro — moving it costs the trip, buying it again costs the whole loin.
SUPUESTO: the safety stock level is taken from the lead time each supplier actually meets in THIS network today, not from a textbook figure. If the supplier took twice as long, the minimums rise and some crossings stop being transfers and go back to being purchases.
The network average said «normal merma». The average was exactly what hid the location that is losing.

Storeroom merma and porcionamiento merma are counted separately: the first is fixed with order, the second with the receta estándar. An owner and a 30 días deadline for each practice that travels.
A note printed on the board itself: figures from different days are not compared, they are discarded. Tuesday stock against Friday stock talks the house into shortfalls that do not exist.

Which of your data it uses
This assistant works with 9 of the 23 fields in «My Restaurant», among them Restaurant name, Business type and Number of locations. It does not ask out of curiosity: these are what make the answer speak about YOUR scale instead of an industry average — the same calculation on a business of another size returns a number you cannot decide with. You fill them once and they apply across the library, so the second assistant you open already starts with them in place. Whatever you leave blank, the assistant asks for one thing at a time instead of inventing it, and says so before answering, so you know what it is working from.
