What it does and what you get
- Between one count and the next, the stockroom talks and nobody listens: the gap between what should be there and what is, the idle money on shelves, the dish that switches off at 8 because something ran out, and what expires on Thursday.

The house ABC: A = pork, chicken, cheese, oil and rice — 68% of the month's purchased money, counted weekly; B every two weeks; C monthly. With 5 A items the count fits in 40 minutes, so the list is cut right: had 14 been left, it turns back into the whole afternoon nobody repeats.

SUPUESTO: the ≤ 2% variance is not an industry truth: it is taken as a starting target because it is what your own July count already reached on chicken and cheese. If this house's real cut were 4%, the pork alarm switches off and the board stops being useful — which is why the target gets revised at the third count, with your data.

The reading, accusing nobody: the pork variance does not come from portioning —the kitchen board's sampled portion weights came back green three weeks running—, so suspicion lands on scale-less receiving, which is exactly where the purchasing board had already been asking for one.
Idle money: rice holds 19 days of stock and turns in 6; 240,000 sleep on a shelf and Tuesday's order goes down.
Friday's stockout: the chicharrón switched off at 9:10 — 14 unsold bandejas in the dining room and 6 dropped delivery orders, which are not recovered the same way: a table changes dish, a delivery cancels. It is the star dish, so the stockout does not cost one plate, it costs the whole table.

How to use it
Which of your data it uses
This assistant works with 9 of the 23 fields in «My Restaurant», among them Restaurant name, Cuisine or concept and Best-selling dishes. It does not ask out of curiosity: these are what make the answer speak about YOUR scale instead of an industry average — the same calculation on a business of another size returns a number you cannot decide with. You fill them once and they apply across the library, so the second assistant you open already starts with them in place. Whatever you leave blank, the assistant asks for one thing at a time instead of inventing it, and says so before answering, so you know what it is working from.
Always up to date
Every assistant carries a visible version and date. When an AI changes how it works, the assistant's version goes up and you see what changed.
