Sales Tactics Builder for Restaurants
Pick the lever you want to move above —ticket, frequency, conversion, win-backs—, the channel and the horizon, and the assistant delivers five to eight tactics with the arithmetic in the open: what each one costs, how much it should lift, what margin it leaves, and the date it gets switched off if the number did not move.
N5Complete system
Several chained pieces you install and operate over time, with their review cadence. It changes how the business runs, not one decision.

What it does and what you get
- To stop doing things and start moving a number.
- The sales conversation in a restaurant usually ends in a list of ideas —a promo, a combo, a post— with no starting figure and no way of knowing, thirty days later, which of them did anything.
- This assistant builds it the other way round: first the arithmetic of the lever you choose, then the ceiling that lever can give in your house —because lifting the ticket 8 % and lifting frequency from 1.4 to 1.6 visits are not worth the same—, and only then the tactics, each with what it costs to run and the margin it leaves after that cost.
- All of them with an off-switch: the date they are retired if they moved nothing, which is the part almost nobody writes and the only one that stops you dragging a promotion that only gives away margin for a year.
What you end up with
The plan for the chosen lever, channel and horizon: the arithmetic with its formula, starting figure and source; the lever's ceiling at 5 % and 10 % scenarios compared against your goal; five to eight tactics with what is done, who does it, in which shift, what it costs to run, how much it should lift and the contribution margin it leaves; the tactics sorted into three lanes —this week with no money, this month with materials, this quarter with investment—; the script line for those that need a mouth; and the measurement table with indicator, starting line, 30-day target, owner and off-switch date, plus the verdict on how much sales rise if the first three are executed.

The owner asked this: «Table-service restaurant in Medellín, 2,400 covers a month, 78,000 COP ticket, 187 million in sales. Food cost 33 %. I want to lift the average ticket in the dining room without raising prices or running promotions. I have 11 people on the floor.»
| Lever | Formula | Starting figure | Source |
|---|---|---|---|
| Average ticket | dishes per cover × average price | 78,000 COP · 1.9 dishes/cover | POS report, last 60 days |
| Starters | tables with a starter ÷ tables served | 12 % | Manual count, 2 weeks |
| Drinks | drinks per cover | 0.8 | POS |
| Dessert | tables with dessert ÷ tables | 6 % | POS |
The house sells 1.9 dishes per cover and 0.8 drinks. The gap is not price: it is that 88 out of every 100 tables order no starter.
| Scenario | What rises | Per month | Against the goal |
|---|---|---|---|
| +5 % ticket | 78,000 → 81,900 COP | +9.4 M COP | 47 % of goal |
| +10 % ticket | 78,000 → 85,800 COP | +18.7 M COP | 94 % |
| Starters 12 % → 25 % | 312 more starters/month at 22,000 | +6.9 M COP | 34 % |
| Drinks 0.8 → 1.0 | 480 more drinks at 9,500 | +4.6 M COP | 23 % |
Starters plus drinks add up to 11.5 M and are the only two that never touch a menu price. That is the road: 6 ticket points without raising a single price.
| Tactic | What is done | Who | Cost to run | Expected sales | Margin left |
|---|---|---|---|---|---|
| Starter offered by name | When taking the order, ONE specific starter is named, not «any starters?» | Server | 0 COP · 10 min rehearsal | +4.1 M | ~2.8 M (FC 32 %) |
| Drink before the menu | The drink order is taken before handing over the menu | Server | 0 COP | +3.2 M | ~2.4 M |
| Second round at two-thirds | Offered before the glass empties, not after | Server / bar | 0 COP | +1.4 M | ~1.0 M |
| Dessert with the coffee, at the table | The dessert menu is brought, not asked about | Captain | 180,000 COP printing | +2.2 M | ~1.5 M |
| Team incentive on starters | 1,500 COP per starter sold above baseline | Manager | ~470,000 COP/month | +2.6 M | ~1.3 M |
Illustrative figures on 2,400 covers. Note what is NOT here: no combo, no discount, no promotion. The first three cost zero and are worth 8.7 M a month.
Illustrative example generated with a fictional restaurant. Not a promise of results, not a client case.
This is 3 of 5 parts. Behind the wall sit the two pieces that turn the list into execution: the three sorted lanes with their shift and owner —plus the script line for the tactics that need a mouth— and the measurement table with the off-switch, the date each tactic is retired if it did not move the indicator.

How to use it
Which of your data it uses
This assistant works with 19 of the 23 fields in «My Restaurant», among them Restaurant name, Business type and Cuisine or concept. It does not ask out of curiosity: these are what make the answer speak about YOUR scale instead of an industry average — the same calculation on a business of another size returns a number you cannot decide with. You fill them once and they apply across the library, so the second assistant you open already starts with them in place. Whatever you leave blank, the assistant asks for one thing at a time instead of inventing it, and says so before answering, so you know what it is working from.
Always up to date
Every assistant carries a visible version and date. When an AI changes how it works, the assistant's version goes up and you see what changed.
v1.0.02026-08-27Born on Diego's brief (2026-08-27) about the sales group in document 41: «this has to be a single sales builder; some are very similar, unify them». It absorbs TWENTY-FIVE pipeline cards —the seven tactics by lever, upselling, cross-selling and suggestive selling, targets, incentives, the weekly and monthly commercial plan, and the eleven channel ones: dining room, corporate, delivery, reservations, events, combos, offers, packages, proposals and campaigns—, which were THREE axes written twenty-five times: the LEVER, the CHANNEL and the HORIZON. The `palanca_de_venta` axis is born with it. The sales scripts from the same group do NOT come here: they are service moments and go to the Hospitality Service Script builder, which already covers them.Included in the always-growing library
