What it does and what you get

Warnings (outside the steps, so they get read): transport ice does not count as cold chain; an unperforated tray pools water and multiplies waste.
SUPUESTO: the audio says «make sure it comes in good and cold» and gives no figure. 4 °C is used as the receiving ceiling, taken from the local health regulation the house has posted in the walk-in — not from an industry average. If the regulation that applies in your city were stricter, this number changes and step 2 gets rewritten: confirm it with your food-safety advisor before publishing v1.1.

«Do it well» is not a criterion: every row says what gets looked at and what counts as yes.
SOP-COC-07 · Fish receiving and storage · v1.0 · DRAFT — it belongs to Volume 1 · Kitchen of the Operations Manual. The kitchen and dishwashing assistant runs it, the head cook validates it and the head cook owns it: both role manuals cite it by its code. It is a sibling of SOP-COC-04 (protein receiving and base-stock cooling), already on the List: it gets cited, not repeated. And if Volume 0 sets a different receiving temperature ceiling, Volume 0 wins and Block A's ASSUMPTION closes with that number.

How to use it
Which of your data it uses
This assistant works with 8 of the 23 fields in «My Restaurant», among them Restaurant name, Business type and Cuisine or concept. It does not ask out of curiosity: these are what make the answer speak about YOUR scale instead of an industry average — the same calculation on a business of another size returns a number you cannot decide with. You fill them once and they apply across the library, so the second assistant you open already starts with them in place. Whatever you leave blank, the assistant asks for one thing at a time instead of inventing it, and says so before answering, so you know what it is working from.
Always up to date
Every assistant carries a visible version and date. When an AI changes how it works, the assistant's version goes up and you see what changed.

The manual that comes out of the audio is no longer a loose sheet: its prompt receives «How it enters the Operations Manual» (datos/manual_operaciones.json → al_manual) —it uses the house constants and the Master List if they are pasted, it is coded SOP-<AREA>-NN with its volume's area, it states which volume it belongs to and which roles run and validate it, and it closes with the updated Master List—; and the area volumes name it as a piece that feeds them. The example adds its entry into Sazón de Origen's Volume 1.v1.1.02026-08-25Body rewritten to pay down duelo debt: it scored 66.8 out of 90.0. Two signals were at ZERO or near it. `lexico` at 0 of 10: the assistant documented «tasks» in the abstract and never named the trade it documents — it now says grammage, portioning, waste, food cost, standard recipe, FIFO rotation, order ticket, star dish and delivery where they belong, and gains the criterion it was missing: where the audio said «a handful», the manual asks for a unit. `cifras` at 1 of 12: the measurement windows are now dated (4 min of audio, gaps closed within 7 days, a 3 min audit, a 5 min monthly routine, a review at 30 days). `metodo` at 3 of 6 because the TASK was a paragraph reading «One… Two… Three…»: it is now six numbered steps injecting «momentos_fuertes», «tipo_cocina» and «meta_principal» (required by arraigo), and the three pieces are named by block. `verificacion` at 1 of 5: the six BEFORE YOU DELIVER questions become five imperative checks. The SUPUESTO: line is added for the case where an external benchmark is needed — and the sample result now shows it on the receiving temperature, which used to be hard-coded as universal truth.
