Operating Template Builder for Restaurants
Pick the form above —opening, closing, goods-in, temperatures, cleaning, till, inventory or maintenance— and the assistant builds it for YOUR operation: each with its owner, its hour of use and its retirement rule, and with THE BLANK SHEET that prints landscape and is filled in with a pen, in a plantillas_operativas.html with the print button inside. You start with THREE: the form nobody fills in is decoration.
N5Complete system
Several chained pieces you install and operate over time, with their review cadence. It changes how the business runs, not one decision.

What it does and what you get
- Generic internet forms die in a folder: they ask for data your house doesn't use, ignore what your house does need, and nobody fills them after week one.
- This assistant builds the templates of YOUR real operation: it asks what gets opened, closed, received and checked, and builds each format to measure — with an owner, an hour of use and the why of every box.
- The house rule runs against enthusiasm: you start with THREE templates, not twenty, and the monthly review retires the one nobody filled — because a wall of empty forms trains the team to ignore them all.
What you end up with
The plantillas_operativas.html file, printable with its button inside and with the nineteen sections of the standard: the operation census with the risk of each moment; the inventory prioritised by the money each form protects, with the figure that sustains it and the verdict; THE ECONOMICS OF THE THREE FORMS —what each costs in team hours a year, what it protects in money, and the return in money protected per hour, the column that decides what gets cut on the day someone is missing—; the first THREE in two sections each —the design box by box with the reason for every box, and THE BLANK SHEET that prints landscape, with its header, its grid and its signatures—; the three owners of each form in a single table; the monthly routine with the compliance indicator, the retirement rule and the entry condition for the fourth; the open items; change control; the acknowledgement of receipt; and the self-audit, computed on generation.

The owner asked this: «I open and close from memory, receive goods without a form and the fridge gets checked “when someone remembers”. Where do I start?»
| Candidate template | The money it protects | Figure that supports it | Priority | Verdict |
|---|---|---|---|---|
| Receiving with a scale | The pork's food cost | 6.8% variance between delivery note and real weight, 4 weeks | 1 | FIRST — it is the open leak |
| Cold-chain log (2 readings/day) | Waste from a broken chain | 3 days with no reading last month | 2 | SECOND |
| Day close (register + voided tickets) | The register and the shortfall | 11 order tickets voided with no reason in 4 weeks | 3 | THIRD |
| Delivery packing check | The channel complaint that cannot be fixed at the table | No house figure yet | 4 | Waits: enters once the 3 have lived a month |
| Dining-room opening | Start-of-day quality | No house figure | 5 | Waits with its written condition |
SUPUESTO: there is no house figure for how much leaks in receiving without a scale, so the variance measured in this very house between delivery note and real weight over 4 weeks is used, not an industry average. If the real value were 2 points lower, receiving would drop to second place and the cold-chain log would rise to first.
| Box | Why it exists | Who fills it | At what hour | Who reads it |
|---|---|---|---|---|
| Supplier · date · hour | Cross-links to the purchasing board | Storekeeper | Every delivery | Manager |
| Scale weight vs delivery note | The box that pays for the template: the gap is written BEFORE signing | Storekeeper | Every delivery | Manager |
| Arrival temperature (cold items) | Objective rejection, no hallway debate | Storekeeper | Every delivery | Chef |
| Rejections and shortages | The supplier's track record is built here | Storekeeper | Every delivery | Manager |
| Receiver's signature | An owner with a name, not «someone» | Storekeeper | Every delivery | Manager |
The template has 12 boxes and gets filled in 90 seconds. It is read on Monday, at the ordering routine: it feeds a decision, not a filing cabinet. Version 1.0 · 2026-08-25 at the foot.
Illustrative example generated with a fictional restaurant. Not a promise of results, not a client case.
This is 2 of 3 parts. Behind the wall are **the printable plantillas.html file with the first three** and **the monthly routine** — the compliance indicator against the month's days, the retirement rule with a written reason and the single-version rule.

How to use it
Which of your data it uses
This assistant works with 9 of the 23 fields in «My Restaurant», among them Restaurant name, Business type and Cuisine or concept. It does not ask out of curiosity: these are what make the answer speak about YOUR scale instead of an industry average — the same calculation on a business of another size returns a number you cannot decide with. You fill them once and they apply across the library, so the second assistant you open already starts with them in place. Whatever you leave blank, the assistant asks for one thing at a time instead of inventing it, and says so before answering, so you know what it is working from.
Always up to date
Every assistant carries a visible version and date. When an AI changes how it works, the assistant's version goes up and you see what changed.
v1.2.32026-09-23Professional document audit (2026-09-23): the expected result promised sixteen sections and the body builds nineteen. Both now say nineteen.v1.1.02026-08-25Body rewritten to pay down duelo debt: it scored 66.0 out of 90.0. TWO signals read ZERO. `cifras` was 0 out of 12 on a card whose deliverable is measured end to end —a template is filled in seconds, read within days and retired within a month— and there was not one figure with a unit in 708 words: the 90-second fill, the 5 min of the shift, the 4 weeks of the census and the 30 days to first reading now come in. `lexico` sat at 0 out of 10: a workshop for operating forms that never named food cost, waste, inventory turnover, standard recipe, portion weight, portioning, costing sheet, order ticket, star dish, labor cost, sales channel or delivery — which are exactly the money each template protects. On top of that `metodo` was 3 out of 6 (the TASK was prose) and `verificacion` 2 out of 5 (the checks were questions strung after a single verb). Rises to 97.5.v1.0.02026-08-15Initial version. Born in batch 11, the first artifact of the c26 manuals family, with the full lead-magnet kit and a Sazón de Origen example. Its rules: three templates not twenty, every box with a why, and the one nobody fills retires with a written reason.v1.2.02026-09-21The file stops being a laid-out text and becomes an OPERATING DOCUMENT under the docs/54 standard: fifteen sections, control cover with code and version, owners with signature, change control, acknowledgement of receipt and a computed self-audit. And what was really missing comes in: each form takes TWO sections —the design box by box and THE BLANK SHEET that gets printed and filled in with a pen—, because a form is not read, it is filled in every day. The sheets print landscape: nine writable columns do not fit a portrait A4, and shrinking them until they do gives rows a pen does not fit into (measured). Also added: the mandatory figure that sustains each candidate priority, the risk per moment in the census, and saying which of the waiting ones CANNOT be born first because they count what nobody weighs today. · SAME-DAY AUDIT: section 4, THE ECONOMICS OF THE THREE FORMS. Measured on Kōyō, goods-in returns 692 USD per hour and delivery packing 41 — seventeen times less — and that is the one reduced to sampling when someone is missing, not the one dropped.v1.2.12026-09-21Same defect as its twin MPV-0616, fixed in the same pass: the BEFORE YOU DELIVER block had been written as a list of counts with no floor. Every point gets its checking verb back and keeps its count, and two missing floors are written down: the 5 min per form and the 24 px writing-line height.More assistants in this category
