What it does and what you get
- A restaurant can show profit on the P&L and still not cover Friday's payroll: profit is an accounting opinion, cash is a fact.
- This assistant builds the owner's financial board — distinct from the KPI sheet and the cost board —: the month's income statement on one screen, the cash flow projected eight weeks out with its traffic lights, and the break-even point stated in money and in dishes per day, so every decision — hiring, buying, opening — is made looking at what's left and what's coming.

Today's weakest datum: weekly consumption is estimated from memory. With no Friday inventory count, the board's food cost is an opinion with two decimals.
SUPUESTO: the two ceilings above are the ones this house declared, not a sector average. If the real food cost ceiling were 2 points higher, the kitchen's light turns from red to amber and the month's first decision stops being purchasing.

The high outflows land on payroll weeks (15th and 30th) and rent (the 5th); inflows in weeks 5 and 6 drop with the January seasonality the owner declared. Week 6 needs 18 M set aside before December 31 to be crossed without a panic loan.
Bottom: the month's break-even — 171 M in sales, that is 3.9 M a day, about 81 covers a day at the 48,000 average ticket, and the current safety margin: 20%.

How to use it
Which of your data it uses
This assistant works with 9 of the 23 fields in «My Restaurant», among them Restaurant name, Business type and Number of locations. It does not ask out of curiosity: these are what make the answer speak about YOUR scale instead of an industry average — the same calculation on a business of another size returns a number you cannot decide with. You fill them once and they apply across the library, so the second assistant you open already starts with them in place. Whatever you leave blank, the assistant asks for one thing at a time instead of inventing it, and says so before answering, so you know what it is working from.
Always up to date
Every assistant carries a visible version and date. When an AI changes how it works, the assistant's version goes up and you see what changed.
