What it does and what you get
- Restaurant inflation doesn't announce itself: it arrives 200 pesos per kilo at a time, supplier by supplier, until the margin wakes up two points thinner and nobody knows when it happened.
- This assistant builds your purchasing board in one file: each key item's price against its own history, supplier compliance measured at receiving — complete, on time, scale rejections —, purchases against the sales-driven sheet, and how much the house depends on each supplier.
- The leak detector finds the hole once and the cost board adds up the period's money; THIS one watches the price at the door, week by week, and decides the order.

The owner asked this: «I buy almost everything from two suppliers, I receive without a scale, and this month chicken arrived more expensive with no warning. I want my purchasing in numbers.»
With no formula, source, frequency and owner by role, the indicator does not enter the board.

SUPUESTO: the concentration threshold used is the one the house declares for its size and its city, not a textbook figure. If the real threshold were lower, Distribuidora Central moves from «watch» to «find a second source this week» and the deadline shortens.
The scale, which is where it gets decided: of the deliveries of the last 4 weeks, the ones that did not cross the scale cannot be audited — and those are exactly the ones that reappear as merma on inventory day.

The ordering guide: the mix de ventas of the last 4 weeks calls for 68 kg of chicken; the habitual order was 80 kg. On Tuesday 70 kg are ordered and the storeroom surplus stops being financed with the business's money.
A note printed on the board itself: the cheapest supplier is not the most profitable one. The one who delivers short costs double in merma, in rework and in the table left without its dish.

How to use it
Which of your data it uses
This assistant works with 9 of the 23 fields in «My Restaurant», among them Restaurant name, Cuisine or concept and Best-selling dishes. It does not ask out of curiosity: these are what make the answer speak about YOUR scale instead of an industry average — the same calculation on a business of another size returns a number you cannot decide with. You fill them once and they apply across the library, so the second assistant you open already starts with them in place. Whatever you leave blank, the assistant asks for one thing at a time instead of inventing it, and says so before answering, so you know what it is working from.
Always up to date
Every assistant carries a visible version and date. When an AI changes how it works, the assistant's version goes up and you see what changed.
