@masterestaurant

Why restaurants and hospitality businesses in Granada hire him

Growing a restaurant is harder than opening one: each new site multiplies costs, standards, talent and complexity, and what worked with three locations collapses with twenty. The scale opportunity is real - and so is the risk of expanding without a system that guarantees per-unit profitability.

This service exists to close that gap: tailor-made expert consulting, executive bootcamps, events and private advisory with the MASTERESTAURANT methodology and its TOOLKIT, applied in 8,400+ restaurants across 43 countries. You bring the growth ambition; we bring the system that makes it profitable, standardized and scalable.

The local market

The restaurant-group and chain market in Granada: the context your portfolio must master

Revenue and margin are two different numbers. A well-established restaurant in Granada that generates €1.2M annually can produce a 15% EBITDA or 4%, depending on where money leaks. It doesn't disappear in the kitchen or the dining room: it flows away in waste that nobody tracks, in the theoretical cost of a recipe that never matches actual cost, in menu engineering that was guesswork, in spoilage nobody names. Working longer hours doesn't close that gap; auditing where numbers actually bleed, does. The problem isn't effort—it's that effort remains invisible. Expert restaurant consulting that works doesn't come to motivate you but to place the exact diagnosis of why EBITDA is what it is on the table, and to build you the systems that defend it.

The point is moving from a business that depends on your judgment to one that runs on system. A business model with shape: a clear Restaurant Model Canvas, Prime Cost under control broken into its three real components (food, labor, other), recipes with technical sheets that don't change each shift, written processes any cook can read, unit EBITDA you can read monthly. The MASTERESTAURANT methodology is tailor-made: no pre-packaged offerings but a diagnosis of your business and its Granada reality, and what we deliver is implemented the following week, not archived in a digital folder. A restaurant that runs this way doesn't need the owner in the kitchen at eleven at night. It grows because the system scales, not because people work harder.

When I audit a restaurant I find the same three or four mistakes over and over, in different formats. Those are learnings from 8,400 restaurants across 43 countries—patterns that don't change. That capital no software or generic MBA replaces. It means I walk into your kitchen already knowing where menu engineering usually cracks, how Granada's tourism seasonality hits Prime Cost harder than other cities, what cost structure works when available talent rotates every 18 months. We don't reinvent the wheel at every consultation. The method works because it has worked, because it's proven across different contexts, because it turns invisible things visible.

The return is concrete. Margin recovered and defended by system, not by surveillance. Costs under control, not under pressure. Consistency across every shift and every location (if you have two or three units). Team trained in processes they understand the why behind. Decisions made with data, not intuition. And an owner who is no longer indispensable for day-to-day operations—which is not a luxury but the requirement for a restaurant to grow when growth is a strategic choice, not a bet.

Granada as a market

Why Granada is a market for restaurants and hospitality businesses

Granada is a concentrated gastro market by neighborhood. Realejo and the historic center eat different from Albaicín or Ronda: high-volume tourism downtown, qualitative tourism in Realejo, stronger local market in north and east. Granada's diner exists in layers: tourist passing through, tourist staying a week, local eating out twice a month, worker grabbing lunch. Purchasing power is uneven by zone, and competition is too. Where there are tapas there are ten bars. Where there's contemporary gastronomy there are three, maximum. Talent: Granada exports young cooks to Barcelona and Madrid but keeps a reserve of rooted people. Costs: a Realejo corner costs twice as much as Ronda in rent, but Ronda has less foot traffic. These are hard positioning decisions, not romantic ones.

What dynamites margin in a Granada restaurant is not the same as Bilbao or Palma. Tourism seasonality here is wild: Easter, July-August, December fill rooms; January-February and September are valleys where fixed costs stay the same but average check drops. That compresses annual EBITDA. Staff rotation in Granada is a sector problem: a head chef gets offers from two hotels every year, and young people leave. Input prices: some rise differently depending on tourist season. Competitive pressure: in saturated zones you either lower check or raise covers, and both steal margin. Granada's diner, also, eats with certain resistance to visible price: wants to feel they eat well, not that they paid well. All of that tightens Prime Cost.

Diego F Parra — international restaurant consultant

Restaurant consulting with its own doctrine, not generic frameworks

Expert restaurant and hospitality consulting is not solved with management theory borrowed from another industry. It is solved with hospitality engineering: Prime Cost under control, theoretical versus actual cost, waste measured, standard recipes, written processes and indicators leadership reviews every week.

Expert restaurant and hospitality consulting, end to end

An engagement that covers the whole cycle, from diagnosis to expansion

Diagnosis and business model

Expert consulting that starts by measuring: where the money goes, what margin each dish leaves, which processes do not exist and which decisions are being made without data. The restaurant's business model comes out of that, not the other way around.

Do you run a group or a chain?

Profitability and cost engineering

Prime Cost under control, theoretical versus actual cost, waste and shrinkage measured, menu engineering and technical sheets. This is the part of restaurant consulting you see first in the till.

A hotel or hospitality group?

Standardization and operations

Standard recipes, written processes, manuals and organizational structure: the restaurant runs just as well on the day the owner is not there. Without standardization there is no growth, only more repeated chaos.

A celebrity or high-profile investor?

Leadership, indicators and growth

A trained team, leadership with indicators in plain sight, and a growth plan with order: new locations, licensing or franchising when the model can carry it, not when the opportunity shows up.

A themed or immersive concept?

The methodology

Discover the MASTERESTAURANT methodology

Behind every restaurant that becomes profitable and runs on a system there is a methodology, not a hunch. MASTERESTAURANT's expert restaurant and hospitality consulting applies it from the very first diagnosis.

Who is it for?

Built for those who run a hospitality business and intend to scale it

Expert restaurant and hospitality consulting works with whoever decides and answers for the numbers: owners, partners, boards and leadership teams.

Established restaurants ready to scale

Proven revenue and the ambition to grow: the business needs its margin defended, a replicable standard and a model that carries the next location without degrading.

High-volume operations

When you sell millions a year, one point of Prime Cost is real money. Theoretical versus actual cost, waste and shrinkage measured, and menu engineering applied where it moves the needle.

Multi-location businesses

The point where the founder's judgement stops scaling: standardization, EBITDA per unit, business governance and a structure that carries growth.

Hotels and hospitality businesses

Food and beverage inside a hotel operation: profitability of the area, its own unit economics and an experience worthy of the rest of the asset.

Investors and family offices

Hospitality assets in a portfolio: independent diagnosis, value thesis and support to leadership so the return does not ride on the operator's luck.

FAQ

Frequently asked questions

How does expert restaurant and hospitality consulting work?

It starts with a full diagnosis of the business: costs, operations, processes, team, customer experience and real numbers. From there comes a work plan prioritized by impact and a tailor-made engagement — virtual, on-site or hybrid — until the changes are implemented and measured, not merely recommended.

How large does a business need to be for this to make sense?

The criterion is not the number of locations: it is the maturity and the ambition of the business. A single restaurant with strong revenue set on scaling is a natural client; so is a multi-location operation that has lost its standard. If what you run is a formal group, chain or holding, the right service is restaurant group consulting; if it is a hotel group, hospitality group consulting.

What concrete results does the consulting leave behind?

Prime Cost measured and defended, theoretical-versus-actual cost closed, waste and shrinkage under control, processes and standard recipes the team actually applies, EBITDA per unit in plain sight for leadership, and a model ready to replicate in the next location. Whatever is measured before gets measured again afterwards: that is the contract.

Do you work with restaurants outside your country?

Yes. The MASTERESTAURANT methodology is applied across 43 countries, in Spanish or English, virtually, on-site or hybrid. International experience makes it possible to adapt recommendations to each city's market rather than copying a recipe from another country.

How is this different from generic business consulting?

It is not generic. Not isolated branding, not marketing alone, not kitchen alone, not franchising alone, not management borrowed from another sector: it is consulting 100% specialized in restaurants and hospitality, integrating strategy, costs, operations, experience, technology, leadership and expansion into a single engagement.
