Why restaurants and hospitality businesses in Paris hire him
The MASTERESTAURANT methodology and its TOOLKIT have been applied across more than 8,400 restaurants in 43 countries. This is not business-school theory: it is what was left standing after working inside real operations, and it arrives with its own instruments —MTIE, Gastronomic Radar, Standard Recipe Generator, Tech Sheets and KPI Dashboard— instead of generic templates.
In Paris it adapts to the market, the size and the stage of the business, because copying a recipe from another country is exactly what this consulting exists to prevent. The order of work stays the same from one market to the next: measure with the operation's own data first, then fix what returns margin fastest, and put the structural work in writing until the model is ready to be replicated.
How does restaurant consulting work in Paris?
In Paris, it begins with a diagnosis of the operation from real data (costs, waste, processes and team) to find where the margin is going. From there comes a work plan sequenced by what each change adds to the bottom line.
It is not generic consulting: it is built on that restaurant's volume, stage and market. The plan puts what moves money first (Prime Cost, theoretical versus actual cost, waste measured, menu engineering) and the structural work second: standard recipes, written processes and indicators leadership reviews every week. The goal is a model that can survive being repeated before anyone signs a second lease. Support runs through implementation, virtually, on site or in a hybrid format, in English or Spanish. This page cites four verified figures as a reference for Paris, from sources such as INSEE and the National Restaurant Association.
What do the numbers say about running a restaurant in Paris?
2,113,705 inhabitants — municipal population of the Paris commune; source: INSEE. It is context, not a diagnosis: it does not say how much margin an operation keeps or where it leaks.
The decision comes from the restaurant's own numbers, not from market figures. Other reference points cited on this page: 42 % (operators who reported their restaurant was not profitable, the National Restaurant Association); 49 % (operators still reporting some level of staffing insufficiency, 2026, the James Beard Foundation); 4-10% (food waste and spoilage over purchases, LeanPath). Those numbers are Prime Cost, the gap between theoretical and actual cost, waste and the margin on each dish. In Paris, as in any other market, they are what show whether the next move is to adjust the menu and prices, tighten the operation or prepare a second site.

The local market
What to know about the Paris market before investing
A consolidated restaurant in Paris generating €2-4M annually is not automatically profitable. Revenue is not margin. Margin disappears where visibility ends: the gap between theoretical food cost and actual production cost, unmeasured waste, PDA, unengineered procurement. A stressed owner can push harder, swap suppliers, add shifts. That gap doesn't close. What closes it is exact visibility: where every euro goes, how much, why. Expert restaurant consulting doesn't motivate teams or chase sales figures. It surfaces and recovers margin that exists but is buried in the numbers.
Transformation is architectural. A business today dependent on the owner's judgment and daily presence becomes a system that runs without him. That means full business model diagnostic, Prime Cost under control with standardized recipes and accurate spec sheets, documented processes that survive staff turnover, unit-level EBITDA transparent, clear structure and governance. MASTERESTAURANT methodology is not theory: it's 43 countries, 8,400 actual restaurants, proven and operating. What is delivered is operational within a week.
When Diego audits a Paris restaurant, he sees what local auditors normalized as inevitable. That cost structure the owner believes "is how it is here" isn't. Staff turnover nobody quantified is measurable and controllable when you have system. That ticket average stuck for years stems from menu engineering that never happened. 8,400 cases across markets and scales are not generic benchmarks: they're real business data, patterns that repeat from Paris to São Paulo. A consultant who closed P&Ls in three continents sees what proprietary software doesn't code, what generic methodology never covers because it never saw the scale Diego saw. That is impossible to replicate.
Return is concrete and measurable from month one. Margin recovered and defended, costs under control in each service and each location if you have multiple, operation consistent without constant owner vigilance. Team trained in the methodology, capable without daily supervision because they understand the why. Decisions made on data, not on the intuition of someone too deep in the weeds. A business that grows when growth is deliberate strategy and viable, not a bet based on finding the right location or having the nerve. And an owner who has his life back: no longer the irreplaceable piece of daily operations.

Paris as a market
Where the Paris foodservice market is decided
Paris market is extreme density and zone-level competition. Marais, Le Bon Marché, Left Bank, the 15th: each has its demand curve, purchasing power, seasonality. Parisian diners are exacting on product and consistency but not tourists; they expect traceability and clear proposition. Quality tourism peaks certain corridors and seasons (April to October), but the base is local repeat, and locals don't return if consistency fails. Rent is punitive (consuming a significant share of gross even in secondary arrondissements), kitchen talent exists but costly and rotative, premium inputs have no volume discount for small operators. An established restaurant here doesn't compete on price: it competes on operational differential and margin, because the numbers leave no other room.
Margin erosion in Paris is specific and measurable. Local cost structure: specialized suppliers charging per-item without volume scales, wages highest in France, staff turnover is not a statistic—it's a real drain (job offers in kitchens are permanent). Seasonality: July and August tourists vanish, certain neighborhoods empty, payroll unchanged. Zone competition: another restaurant three doors down, or delivery with no rent overhead. Parisian diners don't raise ticket average on goodwill; you engineer the menu, measure what generates margin and what only consumes kitchen time. High waste on quality vegetables, PDA nobody quantifies, inventory rotation that should be weekly but takes two weeks. Most established Paris restaurants assume these as market law when they're measurable inefficiency.

The expert restaurant and hospitality consultant
Why his judgment matters in this decision
When an owner hires restaurant consulting, what he is really buying is judgment: someone who has already watched the same plan fail three times and knows where it breaks. Diego F Parra has two decades of that material — engineer and C-Suite consultant, restaurants, franchises, dark kitchens and HORECA groups created, rescued and expanded across four continents, with payrolls signed, leases negotiated and expansions closed in operations worth hundreds of millions of dollars.
That judgment is written into the MASTERESTAURANT® methodology, used by 8,400+ restaurants across 43 countries, and into its TOOLKIT: MTIE, Gastronomic Radar, Standard Recipe Generator, Tech Sheets and KPI Dashboard. The goal is not for you to depend on the consultant, but on the system.

Restaurant consulting with its own doctrine, not generic frameworks
Expert restaurant and hospitality consulting is not solved with management theory borrowed from another industry. It is solved with hospitality engineering: Prime Cost under control, theoretical versus actual cost, waste measured, standard recipes, written processes and indicators leadership reviews every week. Every engagement starts from the Restaurant Model Canvas: the whole business model is diagnosed, priorities are ranked by their impact on margin, and the team is left with its own instruments to sustain the results once the consulting ends. Decisions stop being bets: they are made on data. The method is the same for an independent restaurant, a chain or a hospitality group.

“Restaurants don't fail because of the food. They fail because of the business behind it. When consulting comes in, it's because the P&L looks the same every month while everyone is grinding. That's the signal: either you measure exactly or you don't measure at all.”

FAQ
Frequently asked questions
Our ticket average rose but margin fell. How?
Most common mistake. You raised prices but didn't engineer the menu: now you sell more volume of low-margin items. Higher Prime Cost, labor per cover flat or worse. Audit sales mix, rename dishes to direct demand, recalculate spec sheets. Ticket average only matters if Prime Cost stays under control.
How do I retain staff without breaking payroll?
Not higher wages: it's system. Document processes so everything doesn't live in the head chef's head, build progressive capability throughout your team, measure and reward concrete performance. A restaurant that runs on clear processes retains talent cheaper than one where every day is improvisation. Plus you lose far less to food waste, PDA, and the labor cost of retraining after each departure.
Where does the work begin?
With measurement. A full diagnosis puts the real numbers on the table before anything is proposed: Prime Cost, theoretical versus actual cost, waste, shrinkage, fixed-cost structure and average ticket. Recommending without measuring is just an opinion.
My restaurant is busy and leaves no money. Is that a typical case?
It is the most common case. Busy without margin is almost never a sales problem: it is menu engineering, actual versus theoretical cost, waste, or a fixed-cost structure the volume cannot cover.
How long does the engagement last?
It depends on size and stage. What does not change is the ending: it finishes when the changes are implemented and being measured, not when the report is handed over.
Do you work with the team or only with leadership?
With both, and the order matters. Leadership decides and the team executes; a change leadership approves and the team cannot sustain lasts until the first busy week.
What is the investment?
It is quoted to fit once we know the size of the operation, the number of sites and the scope. Tell us those three facts and you will get a concrete proposal.
