From a restaurant that works to a model that repeats, in Córdoba, Argentina
The MASTERESTAURANT methodology and its TOOLKIT have been applied across more than 8,400 restaurants in 43 countries. This is not business-school theory: it is what was left standing after working inside real operations, and it arrives with its own instruments —MTIE, Gastronomic Radar, Standard Recipe Generator, Tech Sheets and KPI Dashboard— instead of generic templates.
In Córdoba it adapts to the market, the size and the stage of the business, because copying a recipe from another country is exactly what this consulting exists to prevent. The order of work stays the same from one market to the next: measure with the operation's own data first, then fix what returns margin fastest, and put the structural work in writing until the model is ready to be replicated.
How does restaurant consulting work in Córdoba?
In Córdoba, the first step is measuring the restaurant on its own numbers: what each dish really earns, where margin leaks and which decisions are being made without data. The diagnosis then orders the plan by impact, with what moves money first.
The work is done one-on-one with whoever runs the business, in two stages. Within weeks: Prime Cost, theoretical versus actual cost, waste and menu engineering, the part that hits the bottom line first. Then the part that makes the change stick: standard recipes with technical sheets, written processes, manuals and a team trained to run service without the owner in the kitchen. Support lasts until everything is implemented and being measured, not merely recommended.
It runs virtually, on site or in a hybrid format, in English or Spanish. This page cites four verified figures as a reference for Córdoba, from sources such as INDEC and the National Restaurant Association.
What do the numbers say about running a restaurant in Córdoba?
81,305 overnight stays; 44.6% occupancy — overnight stays, 41,276 travelers hosted and hotel occupancy rate in Córdoba city, December 2024; source: INDEC.
It is context, not a diagnosis: it does not say how much margin an operation keeps or where it leaks. The decision comes from the restaurant's own numbers, not from market figures. Other reference points cited on this page: 1.3 % (projected real sales growth for the industry in 2026, the National Restaurant Association); 10 % (menu price increase above which restaurants expect lower profits, 2026, the James Beard Foundation); 31.7% (Off-premise revenue of the growing restaurant, Masterestaurant).
Those numbers are Prime Cost, the gap between theoretical and actual cost, waste and the margin on each dish. In Córdoba, as in any other market, they are what show whether the next move is to adjust the menu and prices, tighten the operation or prepare a second site.

The local market
What to know about the Córdoba, Argentina market before investing
Revenue is not margin. A restaurant or hospitality business in Córdoba can be generating strong sales while bleeding margin in silence, unaware of where. It sits in the gap between the theoretical cost of a dish and what it actually costs to prepare it week after week. In waste and untracked loss. In menu engineering nobody revisited in years. In labor ratios that don't drop even though you're pushing hard.
I've seen restaurants double their margins without touching revenue, just by clarifying where money actually goes. The difference between a business that runs on the owner's judgment and one that runs on system. That's what restaurant consulting based on MASTERESTAURANT delivers: visibility of real Prime Cost, standardized recipes, technical specification sheets, and an operation that functions when the owner isn't present.
MASTERESTAURANT is a comprehensive engagement that transforms a business dependent on owner judgment into an operation running on system. It starts with a deep diagnostic of your business: where the money is, where it leaks, what's broken in structure. From there emerges a custom model for that specific restaurant: the Restaurant Model Canvas, with Prime Cost under real control, standardized recipes documented, technical sheets that work whether Chef X or Chef Y is on line.
EBITDA per unit stops being a number nobody cares about and becomes the compass for daily decisions. And it's implemented immediately: what's delivered doesn't sit in a folder, it's live the following week. A team that knows what to do, at what cost, and in what time. That's operation.
Authority doesn't come from a methodology someone invented in a seminar. It comes from real cases across forty-three countries: restaurants of different sizes, markets, structures. Those patterns aren't replaced by theory or software. They're operational learning: what fails, where, why, and how to fix it without stopping the business. Diego F Parra has guided more than eight thousand four hundred restaurants and gastronomic groups, from small independent establishments to complex operations.
C-Suite consultant for executive hospitality leadership. Creator of the internal technology suite: the Gastronomic Radar, the Standard Recipe Generator, the Technical Sheet Engine, and EBITDA Dashboards. These are tools born from consulting, not from a software vendor.
What does the owner gain? Margin recovered in every service, every day, without selling more. Costs under real control, not under guesswork. A team executing the same standard each shift: the product is consistent, the customer feels it, comes back. The Chef is no longer the bottleneck of operation. Decisions backed by data: where to expand, what the real cost is of a second location, what return to expect.
A business that grows when growth is strategic choice, not a gamble. An owner who stops being essential to daily operation—can attend a meeting without everything crashing. That frees mental capital and time for the next move.

Córdoba as a market
Why Córdoba, Argentina is a market for restaurants and hospitality businesses
Córdoba has a consolidated gastronomic market with well-defined consumption zones: historic Centro with the Cañada corridor, Nueva Córdoba as a hub for young professionals, emerging northern corridors. The Córdoba diner has distinct profile and purchasing power from the rest of Argentina: historically more conservative in non-traditional dining experiences, but willing to invest in quality when they perceive value.
Tourism is relevant but seasonal: the region attracts visitors mainly for heritage (Jesuit sites, colonial history) and regional circuits, not for gastronomic reputation like other cities. Competition is local: you don't compete with national chains—you compete with other Córdoba restaurants for the same table, same zone, similar rent and labor costs. Chef salaries and front-of-house staff sit in a defined range. Rent is a fixed line. Margin is not faith—it's the result of understanding that specific market, its seasonal flows, expectations, costs.
In Córdoba, margin erodes in very specific places. Local cost structure: rent in prime zones is accessible compared to Buenos Aires, but customer turnover is slower, requiring higher operating margins to survive. Seasonality hits hard: January and February are critical for Centro restaurants relying on tourism; July rebounds. Staff turnover is high: a skilled Chef or sommelier leaves for Buenos Aires, and training a replacement costs money and time.
Premium ingredient prices have anchors: there's no bypass to the quality supplier, and the local vendor knows there's no alternative. So a restaurant without visibility of real Prime Cost, that doesn't standardize recipes, that doesn't control waste, is losing 3-5 margin points that competitors already captured. Hospitality consulting that understands that market doesn't offer generic recipes.

The expert restaurant and hospitality consultant
Twenty years of real operations, not theory
There are consultants who have read about restaurants and consultants who have stood inside one at nine on a Friday night. Diego F Parra is the second kind: engineer and C-Suite consultant with two decades creating, rescuing and expanding restaurants, franchises, dark kitchens and HORECA and hospitality groups across four continents, with payrolls signed, leases negotiated and expansions closed in operations worth hundreds of millions of dollars.
That experience was distilled into the MASTERESTAURANT® methodology, applied today by 8,400+ restaurants across 43 countries, and into its TOOLKIT: MTIE, Gastronomic Radar, Standard Recipe Generator, Tech Sheets and KPI Dashboard. Tools, not slides.

Restaurant consulting with its own doctrine, not generic frameworks
Expert restaurant and hospitality consulting is not solved with management theory borrowed from another industry. It is solved with hospitality engineering: Prime Cost under control, theoretical versus actual cost, waste measured, standard recipes, written processes and indicators leadership reviews every week. Every engagement starts from the Restaurant Model Canvas: the whole business model is diagnosed, priorities are ranked by their impact on margin, and the team is left with its own instruments to sustain the results once the consulting ends.
Decisions stop being bets: they are made on data. The method is the same for an independent restaurant, a chain or a hospitality group.

Discover the MASTERESTAURANT methodology
Behind every food business that scales profitably there is a method, not a hunch: applied from the first diagnosis, with its own instruments.
Who is it for?
Built for those who run a hospitality business and intend to scale it
Tailor-made 1-on-1 support, for new projects and for operations already running:
Busy and thin on margin
The most common case. The room works, the till does not follow, and the problem lives in menu engineering or in the fixed-cost structure.
Grew faster than its processes
Three or four sites opened quickly and nothing written down. Every location runs its own way and nobody can say which one makes money.
About to open the next one
The ideal moment and the last cheap one: standardizing before replicating costs a fraction of fixing it with two sites running.
Change of leadership or partners
An operation changing hands needs to know what is being bought: real numbers, processes that exist and risks nobody named.
What does it include?

FAQ
Frequently asked questions
Do you offer restaurant management consulting in Córdoba?
Yes. Restaurant management consulting in Córdoba starts with a diagnosis built from the restaurant's real data (costs, waste, processes and team), then a work plan sequenced by what each change adds to the bottom line, built on that restaurant's volume, stage and market.
Who is a restaurant consultant in Córdoba for owners who want a repeatable model?
Diego F. Parra, the restaurant consultant behind MASTERESTAURANT, works with owners in Córdoba one on one: first a diagnosis from the operation's own data, then a plan ranked by margin impact, so the restaurant can run and grow without improvising.
How do I know if my margin is where it should be? I've increased turns and revenue, but I'm not seeing the money.
Your Prime Cost is out of control. Most common mistake. A real diagnostic of yours—comparing theoretical cost of each dish against actual ingredient spend, waste, loss, portion—shows where money disappears. I've seen restaurants recover 3-4 margin points just by getting that metric in order. You don't need to sell more. You need visibility of what's broken and authority to standardize it.
What's my real EBITDA per unit? I need to know whether I can add a second location or if it's a gamble.
You don't know because you don't measure it. Most restaurants don't have documented EBITDA per unit: they just see revenue and gross expenses. When we calculate it—net revenue minus direct costs and allocated fixed costs per unit—the number shocks because it's real. A second location copying your current model inherits the same mistakes at scale. With EBITDA clear, you decide whether to expand, knowing the expected return.
When is the right time to open the next site?
When the model survives repetition: written processes, standard recipes the team follows, Prime Cost defended and EBITDA per unit in plain sight. Opening before that multiplies the problem, not the turnover.
What is Prime Cost and why insist on it?
It is food and beverage cost plus labour cost. It is the figure that moves fastest and decides the most margin in a restaurant, and most operations know it a month late.
What is the difference between theoretical and actual cost?
Theoretical is what dishes should cost according to the technical sheet; actual is what they cost. The gap is waste, uncontrolled portioning or badly negotiated purchasing, and until it is measured it cannot be fixed.
Does this apply to a hotel or only to restaurants?
It applies to the food and beverage side of a hotel operation, with its own unit economics. If you run a full hotel group, the hospitality-groups service is the right one.
What if my problem is the team, not the numbers?
It is usually both. A team without written processes or indicators does not fail on attitude: it fails because nobody told it what its good work is measured against.
