Why restaurants and hospitality businesses in Nicaragua hire him
Growing a restaurant is harder than opening one: each new site multiplies costs, standards, talent and complexity, and what worked with three locations collapses with twenty. The scale opportunity is real - and so is the risk of expanding without a system that guarantees per-unit profitability.
This service exists to close that gap: tailor-made expert consulting, executive bootcamps, events and private advisory with the MASTERESTAURANT methodology and its TOOLKIT, applied in 8,400+ restaurants across 43 countries. You bring the growth ambition; we bring the system that makes it profitable, standardized and scalable.
The local market
The restaurant-group and chain market in Nicaragua: the context your portfolio must master
A restaurant in Nicaragua that generates solid revenue has an invisible blind spot: it confuses turnover with margin. You see 4, 5, or 6 million córdobas flowing through the month and assume the business is healthy; what you don't see is where profitability leaks away. The food cost your software reports almost never matches what you actually spend. Shrinkage and product loss—spoilage and waste—go unmeasured; they're guessed at. Menu engineering doesn't happen either: each dish makes it onto the menu because the owner likes it, not because its unit economics justify it. Your Prime Cost (food and labor combined) should sit between 55% and 60% of revenue; instead, it lands at 68%, 70%, sometimes higher. The instinct is to work harder, spend more time in the kitchen, squeeze suppliers. What almost no one does is measure. Real restaurant consulting doesn't come to squeeze; it reveals where what you earn disappears.
Transformation means moving from a business built on the owner's judgment to one that runs on system. It starts with a true diagnostic of your operation—real numbers, margins by shift and by dish—and builds a Restaurant Model Canvas tailored to your reality. It means obsessive focus on Prime Cost. It means every recipe documented with its cost card, yield, portion size. Every process written down. EBITDA per unit visible and managed. None of this is bureaucracy. It's the difference between knowing something is broken and knowing precisely what is broken and where, and being able to fix it without the owner in the middle of every decision. The MASTERESTAURANT method is proven—applied across 43 countries and 8,400+ operations—but the real point is that what gets delivered goes into operation next week. It doesn't sit in a folder. It works.
When an expert audits a restaurant, they don't start from zero. The patterns that emerge from thousands of real cases—how food costs drift in March, why labor turnover spikes in April, which promotions destroy margin without lifting check average—those patterns aren't replaced by software or generic consulting templates. Diego has audited operations in Miami, Mexico City, Madrid, São Paulo. He's seen how a seemingly solid business slowly bled margin because no one measured. When he works in Nicaragua, he brings no theory. He brings real learning from real cases, and that compresses the timeline. You don't spend two years discovering what others already have.
The return is concrete: margin recovered—most clients add 2–5 EBITDA points in the first quarter alone—; costs actually controlled, not guessed at; consistency across every shift and every location if there are multiple ones; staff trained in the method; decisions based on data, not instinct. Most importantly: a business structured for growth, not an owner who hopes that opening a second location will somehow replicate what worked before by accident. When you grow, you grow profitably. When you decide not to, the business gives you room to breathe.

Nicaragua as a market
Why Nicaragua is a market for restaurants and hospitality businesses
Nicaragua's food scene is diverse but concentrated. Managua holds the bulk of high-ticket spending—Altamira, Villa Fontana, Los Robles, the Bolonia corridor—where restaurants do 10–20 million córdobas monthly. Granada is a different ecosystem: strong tourism, sharp seasonality (October–March is peak; April–September slows), higher check average but volatile. León has a more local market but demand for professional operations. San Juan del Sur draws upscale tourism in season. The customer who spends is an executive, an entrepreneur, a business traveler, or leisure tourist with purchasing power; they're not shopping on price. The problem isn't the food—the culinary offer is solid in those markets. The problem is cost structure: premium-zone rent, limited talent for supervision and kitchen leadership, year-over-year ingredient inflation that you can't fully pass to menu prices without losing customers. A restaurant that doesn't plan June knowing July will be weak bleeds profitability without realizing why.
Margin erosion in Nicaragua has specific sources. First, córdoba volatility and the rising cost of staple ingredients (meats, fish, imports) that you often can't fully shift to menu prices. Second, labor turnover: a trained cook or maître d' leaves after eight months for another restaurant or drifts to Costa Rica, and your training investment leaves with them. Third, pricing by peer comparison rather than by unit economics—if the competitor charges 450 córdobas, you do too, even if your cost structure is different. Fourth, unmeasured product loss and shrinkage; you report 3% waste when it's really 6% or 7%. Fifth, seasonality: operations that book 60% of annual revenue in four months and spend the rest in survival mode. Without planning that curve, you end up with phantom margins.

Behind MASTERESTAURANT's expert consulting is Diego F Parra: engineer and C-Suite consultant with two decades creating, rescuing and expanding restaurants, franchises, dark kitchens and HORECA and hospitality groups across four continents. He doesn't arrive with management theory: he arrives with the experience of having signed payrolls, negotiated leases, structured partnerships and closed expansions in operations worth hundreds of millions of dollars.

Restaurant consulting with its own doctrine, not generic frameworks
Expert restaurant and hospitality consulting is not solved with management theory borrowed from another industry. It is solved with hospitality engineering: Prime Cost under control, theoretical versus actual cost, waste measured, standard recipes, written processes and indicators leadership reviews every week.
Expert restaurant and hospitality consulting, end to end
An engagement that covers the whole cycle, from diagnosis to expansion
Diagnosis and business model
Expert consulting that starts by measuring: where the money goes, what margin each dish leaves, which processes do not exist and which decisions are being made without data. The restaurant's business model comes out of that, not the other way around.
Do you run a group or a chain?Profitability and cost engineering
Prime Cost under control, theoretical versus actual cost, waste and shrinkage measured, menu engineering and technical sheets. This is the part of restaurant consulting you see first in the till.
A hotel or hospitality group?Standardization and operations
Standard recipes, written processes, manuals and organizational structure: the restaurant runs just as well on the day the owner is not there. Without standardization there is no growth, only more repeated chaos.
A celebrity or high-profile investor?Leadership, indicators and growth
A trained team, leadership with indicators in plain sight, and a growth plan with order: new locations, licensing or franchising when the model can carry it, not when the opportunity shows up.
A themed or immersive concept? The methodology
Discover the MASTERESTAURANT methodology
Behind every restaurant that becomes profitable and runs on a system there is a methodology, not a hunch. MASTERESTAURANT's expert restaurant and hospitality consulting applies it from the very first diagnosis.
Who is it for?
Built for those who run a hospitality business and intend to scale it
Expert restaurant and hospitality consulting works with whoever decides and answers for the numbers: owners, partners, boards and leadership teams.
Established restaurants ready to scale
Proven revenue and the ambition to grow: the business needs its margin defended, a replicable standard and a model that carries the next location without degrading.
High-volume operations
When you sell millions a year, one point of Prime Cost is real money. Theoretical versus actual cost, waste and shrinkage measured, and menu engineering applied where it moves the needle.
Multi-location businesses
The point where the founder's judgement stops scaling: standardization, EBITDA per unit, business governance and a structure that carries growth.
Hotels and hospitality businesses
Food and beverage inside a hotel operation: profitability of the area, its own unit economics and an experience worthy of the rest of the asset.
Investors and family offices
Hospitality assets in a portfolio: independent diagnosis, value thesis and support to leadership so the return does not ride on the operator's luck.

FAQ
Frequently asked questions
How does expert restaurant and hospitality consulting work?
It starts with a full diagnosis of the business: costs, operations, processes, team, customer experience and real numbers. From there comes a work plan prioritized by impact and a tailor-made engagement — virtual, on-site or hybrid — until the changes are implemented and measured, not merely recommended.
How large does a business need to be for this to make sense?
The criterion is not the number of locations: it is the maturity and the ambition of the business. A single restaurant with strong revenue set on scaling is a natural client; so is a multi-location operation that has lost its standard. If what you run is a formal group, chain or holding, the right service is restaurant group consulting; if it is a hotel group, hospitality group consulting.
What concrete results does the consulting leave behind?
Prime Cost measured and defended, theoretical-versus-actual cost closed, waste and shrinkage under control, processes and standard recipes the team actually applies, EBITDA per unit in plain sight for leadership, and a model ready to replicate in the next location. Whatever is measured before gets measured again afterwards: that is the contract.
Do you work with restaurants outside your country?
Yes. The MASTERESTAURANT methodology is applied across 43 countries, in Spanish or English, virtually, on-site or hybrid. International experience makes it possible to adapt recommendations to each city's market rather than copying a recipe from another country.
How is this different from generic business consulting?
It is not generic. Not isolated branding, not marketing alone, not kitchen alone, not franchising alone, not management borrowed from another sector: it is consulting 100% specialized in restaurants and hospitality, integrating strategy, costs, operations, experience, technology, leadership and expansion into a single engagement.
