What sits behind this episode
A menu is not a list of what you know how to cook: it is the product portfolio of the business, and like any portfolio it has items that bring people, items that leave margin and items that only take up space. Confusing the three is what makes a menu long and unprofitable.
Every dish is judged on two numbers: how much it rotates and how much margin it leaves. That produces four groups, and each group has a different action. Those that rotate and leave margin get protected and made visible; those that rotate without margin get redesigned; those with margin and no rotation get pushed; those doing neither leave.
A shorter menu almost always performs better. Fewer references means less inventory, less waste, less prep time and a kitchen that executes better what actually sells. Variety is perceived through menu design, not through the number of dishes.

How do you decide which dishes stay on the menu?
With two numbers: rotation and margin. That produces four groups, each with its own action: protect, redesign, push or remove.
Does a shorter menu sell less?
It usually sells more and costs less: less inventory, less waste, less prep time and better execution. Variety is perceived through design, not dish count.
What do you do with a dish that rotates a lot and leaves little?
Redesign the recipe or adjust the price. Removing it outright can cost traffic, because it is often the one bringing people in.
