The topic, in detail
What sits behind this episode
Input costs rise and the first reaction is usually the same: absorb the hit and wait for it to pass. It rarely passes. A restaurant that absorbs every increase without touching its structure is not protecting the guest, it is funding inflation out of the only margin it has.
The way out does not start with the selling price, it starts with knowing what each dish actually costs today and not last month. Without an updated recipe cost sheet, any pricing decision is a bet. With one, the conversation changes: it is no longer whether to raise, but what to raise and by how much.
There are three levers before touching the menu the guest sees: renegotiating with suppliers on real volume, redesigning the recipes that carry the cost without carrying sales, and removing dishes that are only there out of habit. All three can move within a week and none of them require the guest to notice anything.

The mentor
Who is behind the podcast: someone who has run restaurants
The podcast is hosted by Diego F Parra: engineer and consultant with more than 20 years creating, rescuing and growing restaurants, dark kitchens and food businesses across four continents. He has stood on the owner's side — opening, operating, correcting and selling — which is why every episode goes straight to the point: what is failing in the business model and what to do first.
He created the MASTERESTAURANT methodology, applied by more than 8.400 restaurants in 43 countries, and wrote 'From Slave to Owner' and 'Triunfar o Morir en el Intento'. In the podcast, that methodology is applied to the real questions of the trade: numbers, concept, team and market.
His bilingual community of owners, chefs and operators exceeds 65M views per year as @masterestaurant. See his full track record in the professional profile of Diego F Parra.

A podcast with its own method, not loose opinions
Every episode is built on the Restaurant Model Canvas and MASTERESTAURANT engineering: business model, value proposition, customer experience, menu and costs, Prime Cost, operations and team. It is not a motivational talk: it is one topic, ordered with judgment and numbers, so you leave with an action you can execute immediately — plus, if your case requires it, the route to the right program or service in the ecosystem.
That is why every episode links to the challenge, program, course or book that works its topic in depth, in the same language used by the owners who already apply the methodology in their restaurants.

FAQ
FAQ about this episode
Is raising prices the only way out when everything goes up?
No, and it is usually the last one. Before that come the updated cost sheet, supplier renegotiation, redesigning expensive recipes and removing dishes that do not contribute. Price is touched once the real cost is known, not before.
How often should a menu be re-costed?
At least quarterly, and immediately when a key input moves more than ten percent. A cost sheet from six months ago describes a restaurant that no longer exists.
What do you do with dishes that became unprofitable?
You decide with data: if it sells and leaves no margin, redesign the recipe or reprice it; if it does not sell and also costs, it leaves the menu. Keeping a dish out of nostalgia is paid for by the margin every single day.
