The topic, in detail
What sits behind this episode
Raising prices is frightening because you picture the worst reaction: the guest leaves. In practice, what makes them leave is usually not the new price but the feeling that nobody warned them, nobody explained it and nothing changed in return. The same increase lands differently depending on how it arrives.
Before price comes menu structure. Raising everything equally is the worst version: it punishes the dishes that already carried margin and makes the ones that attract more expensive. A proper adjustment starts with firm demand and low sensitivity, and leaves alone the anchor dishes guests use to judge whether the place is expensive.
The increase holds if something accompanies it: a portion that is respected, service that does not fail, a shorter and better executed menu. Price is a promise; raising it without moving the promise is what guests punish.

The mentor
Who is behind the podcast: someone who has run restaurants
The podcast is hosted by Diego F Parra: engineer and consultant with more than 20 years creating, rescuing and growing restaurants, dark kitchens and food businesses across four continents. He has stood on the owner's side — opening, operating, correcting and selling — which is why every episode goes straight to the point: what is failing in the business model and what to do first.
He created the MASTERESTAURANT methodology, applied by more than 8.400 restaurants in 43 countries, and wrote 'From Slave to Owner' and 'Triunfar o Morir en el Intento'. In the podcast, that methodology is applied to the real questions of the trade: numbers, concept, team and market.
His bilingual community of owners, chefs and operators exceeds 65M views per year as @masterestaurant. See his full track record in the professional profile of Diego F Parra.

A podcast with its own method, not loose opinions
Every episode is built on the Restaurant Model Canvas and MASTERESTAURANT engineering: business model, value proposition, customer experience, menu and costs, Prime Cost, operations and team. It is not a motivational talk: it is one topic, ordered with judgment and numbers, so you leave with an action you can execute immediately — plus, if your case requires it, the route to the right program or service in the ecosystem. That is why every episode links to the challenge, program, course or book that works its topic in depth, in the same language used by the owners who already apply the methodology in their restaurants.

FAQ
FAQ about this episode
How much can you raise without losing guests?
It depends on the dish, not the restaurant. Items with firm demand and low sensitivity take more; anchor dishes, the ones guests use to judge whether you are expensive, take far less.
Do you raise everything equally?
That is the worst version. A flat rise punishes what already had margin and prices up what attracts. Adjust dish by dish, with rotation and margin data.
What makes a guest accept an increase?
Something accompanying it: a respected portion, service that does not fail, a shorter and better executed menu. Price is a promise and guests punish it rising while the promise stays still.
