The topic, in detail
What sits behind this episode
Splitting the till every month feels like success and is usually what prevents a business from being built. What is left in the till is not profit: it is cash flow. Profit appears after recognising taxes, equipment replacement, maintenance and the low seasons you know are coming.
A restaurant with no reserve lives off next month. One broken piece of equipment, one slow month or a rent change is enough to force borrowing for something that was entirely predictable. A reserve is not excessive caution: it is what separates a business from a lucky streak.
The order is simple and almost nobody follows it: pay operations, set aside taxes, set aside replacement and reserve, pay the operating partner's salary — which is a cost, not profit — and only what is left gets distributed. And distributed on a defined schedule, not whenever the till looks good.

The mentor
Who is behind the podcast: someone who has run restaurants
The podcast is hosted by Diego F Parra: engineer and consultant with more than 20 years creating, rescuing and growing restaurants, dark kitchens and food businesses across four continents. He has stood on the owner's side — opening, operating, correcting and selling — which is why every episode goes straight to the point: what is failing in the business model and what to do first.
He created the MASTERESTAURANT methodology, applied by more than 8.400 restaurants in 43 countries, and wrote 'From Slave to Owner' and 'Triunfar o Morir en el Intento'. In the podcast, that methodology is applied to the real questions of the trade: numbers, concept, team and market.
His bilingual community of owners, chefs and operators exceeds 65M views per year as @masterestaurant. See his full track record in the professional profile of Diego F Parra.

A podcast with its own method, not loose opinions
Every episode is built on the Restaurant Model Canvas and MASTERESTAURANT engineering: business model, value proposition, customer experience, menu and costs, Prime Cost, operations and team. It is not a motivational talk: it is one topic, ordered with judgment and numbers, so you leave with an action you can execute immediately — plus, if your case requires it, the route to the right program or service in the ecosystem.
That is why every episode links to the challenge, program, course or book that works its topic in depth, in the same language used by the owners who already apply the methodology in their restaurants.

FAQ
FAQ about this episode
Why should you not split the till every month?
Because what is in the till is cash flow, not profit. Profit appears after recognising taxes, replacement, maintenance and predictable low seasons.
What gets set aside before distributing?
Taxes, equipment replacement and reserve, and the operating partner's salary — which is an operating cost, not profit.
How often should profits be distributed?
On a defined schedule and after closing the books, not when the till looks healthy. Distributing by feel is what leaves a business with no backbone.
