What a themed restaurant project in San José is looking for when it calls
The mistake that repeats in San José has a recognizable shape: the money goes first into ambiance, scenography and a long menu, and only when the novelty wears off does someone ask what each dish costs. By then the concept sits on a model that cannot hold a quiet Tuesday.
The right order is the opposite, and that is what gets worked on here: first the business model, then the experience that model can afford. 1-on-1 tailor-made consulting, workshops and private advisory with the MASTERESTAURANT methodology and its TOOLKIT, in use in 8,400+ restaurants across 43 countries.
How does themed restaurant consulting work in San José?
First it confirms the concept leaves a margin in San José; only then does the budget go into ambiance. The consulting starts from a strategic diagnosis and turns the project into a business model that repeats the experience without improvising.
Each project moves through the same stages, sized to it: diagnosis, business-model design with the key elements of the Restaurant Canvas, opening readiness, implementation and expansion. It covers the immersive experience, the menu and its profitability, cost structure, processes and leadership, plus partner and investor management as the concept scales. It serves concept founders, groups and chains, hotels and tourism developments, brands and investors. The concept and its intellectual property remain the client's, and the work runs on site or virtually, in English or Spanish. As a starting point, this page gathers four verified reference figures from sources such as INEC and ICT Costa Rica.
What do the numbers say about the market for a themed restaurant in San José?
1,662,138 inhabitants — population of San José province as of June 30, 2025, according to INEC. Reference figures describe the setting a concept competes in; they do not say whether a themed experience will still leave a margin after opening.
For a themed restaurant, the data informs one concrete decision: how much can go into ambiance before the model stops working. Other reference points cited on this page: US$5,434 million (foreign exchange from tourism in 2024, historic record, ICT Costa Rica); 7,495 construction permits (construction permits issued in San José province, the highest among the country's seven provinces, INEC); 2,661,488 international tourists (international tourist arrivals by air to Costa Rica during 2024, +7.7% over 2023, ICT). In San José, each figure is read alongside average check, menu engineering and Prime Cost before spending on decor, because novelty brings the first visit and margin decides whether there is a second one.

The local market
How the concept market behaves in San José
A themed restaurant in San José attracts guests with its concept and ambiance for the first few months. Then it discovers that decoration doesn't cover payroll or fund growth. I spend years with restaurant groups that invested millions in architecture and storytelling while neglecting what sustains any business: the business model itself. Prime cost without controls. Insufficient table turns. Average check that doesn't cover operations. Experience isolated from actual purchase drivers. The theme attracts; the business retains. When you have only the first, the project lives off asset liquidation, not cash flow. A themed restaurant that works isn't a decorated attraction park; it's a system where concept, experience, cuisine, service, ambiance, operations, and operating margin work together, amplifying each other. That system is what's almost always missing.
The MASTERESTAURANT methodology takes your themed idea and translates it into a restaurant business: architected business model, differentiated concept with storytelling that converts into consumption reasons, clear value proposition against competitors, customer journey optimizing each interaction moment, experiential design backed by operational engineering, menu engineering balancing margin and satisfaction, transparent unit economics, standardized processes that scale without losing identity, metrics telling you weekly what's working and what isn't, leadership structure independent of your presence in the kitchen. It's not a diagnostic ending in recommendations. It's accompaniment until the business matures operationally. Everything calibrated for your market: its public, logistics, and available talent.
When you direct a restaurant project at scale, risk sits in what you don't know. I've spent years with groups operating restaurants across multiple countries: what works in one market, what fails in another, where recurring mistakes cost. I designed the MASTERESTAURANT methodology applied by over 8,400 restaurants and groups in 43 countries; that's not just scale, it's case density: I know what happens when a theme ages, when an experiential concept becomes operationally unsustainable, when a restaurant becomes founder-dependent. That error pattern is what you reduce by applying the method before investing in renovation or replicating a second location. My role is ensuring that global learning saves you years of local trial and error.
Greater differentiation means occupying an uncontested space in the diner's mind. Memorable experience with high repeat: average check rises when the experience justifies the price. Controlled operating margin: you know your prime cost, you see where pesos leak through waste or unproductive labor, you optimize. A business that scales: when the model works in one location, replicating in a second or third is orderly action, not reinvention. Brand value attracting investors: a themed restaurant publishing its numbers, demonstrating sustainable profitability, operated by teams of three or four managers (not entirely founder-dependent), is an asset. Independence: the theme doesn't rely on you dropping into the kitchen to fix failures. That's what you gain.

What makes San José attractive for a themed restaurant
San José concentrates the country's highest purchasing power, with entertainment hubs in Barrio Escalante, Los Yoses district, and shopping centers where premium dining competes for occupancy. Metropolitan tourism isn't Cancún, but it's steady: Central American visitors seeking gourmet or family experience, expatriate residents with discretionary leisure spending, executive class with dining-out budgets. Three and four-star hotels generate constant demand for experiential dining. The shopping center market grows for differentiating brands. Costa Rican culinary culture is solid yet traditional; a themed or immersive experience respecting local ingredients and recognizable flavors has audience in 35-55-year-old business owners and family groups. High season runs January through April; September and October dip. That cycle determines whether the model supports fixed overhead.
What works: a themed restaurant that isn't costume, that justifies its ambiance with coherent experience, serving real food at the price it charges, mixing local and tourist public. What fails almost always: concepts copying foreign ideas without adaptation, experiences that don't close narratively leaving diners confused, decoration maintenance costs bleeding cash flow, menus missing their own margin (copying recipes, not understanding production cost locally), decorations eroding in eight months because humidity and wear weren't anticipated. Your diners aren't captive; they have options. They expect experience justifying price and food tasting like food, not secondary. Risk is high when you design concept without business. Many themed restaurants open with operating load exceeding what the local market typically sustains.

The themed consultant
Twenty years of real operations, not theory
There are consultants who have read about restaurants and consultants who have stood inside one at nine on a Friday night. Diego F Parra is the second kind: engineer and C-Suite consultant with two decades creating, rescuing and expanding restaurants, franchises, dark kitchens and HORECA and hospitality groups across four continents, with payrolls signed, leases negotiated and expansions closed in operations worth hundreds of millions of dollars.
That experience was distilled into the MASTERESTAURANT® methodology, applied today by 8,400+ restaurants across 43 countries, and into its TOOLKIT: MTIE, Gastronomic Radar, Standard Recipe Generator, Tech Sheets and KPI Dashboard. Tools, not slides.
The picture is completed by 3 ISBN-registered books, including «De esclavo a dueño», the industry's leading podcast, the largest bilingual community of owners, chefs and operations directors in the region (65M+ views per year as @masterestaurant) and a place among the top Latino restaurant operations experts globally. Themed restaurant consulting with its own doctrine, not generic recipes
Themed restaurant consulting is not improvised. Every engagement is built on the Restaurant Model Canvas and real industry data — profitability, Prime Cost, cost structure, customer experience and expansion — applied to the specific business model of a themed restaurant. The goal is not a venue for the opening-night photo, but a food business that protects the concept, generates profit and can scale to new locations, licenses or franchises when the model is ready. That is why the work is organized on four fronts —diagnosis and business model; concept, menu and themed experience; structure, costs and operation; expansion, franchise and new locations— so the concept still holds up when it is no longer new.

Who is Diego F Parra?
Diego F Parra is an engineer and C-Suite consultant, creator of the MASTERESTAURANT® methodology —applied by 8,400+ restaurants across 43 countries— and author of 3 ISBN-registered books.
He is the consultant that brands and concepts, athletes, artists and investors choose to turn their brand into a profitable, standardized themed restaurant ready to expand. He has spent two decades creating, rescuing and expanding restaurants, franchises, dark kitchens and HORECA groups across four continents, and he works with his own tools: MTIE, Gastronomic Radar and KPI Dashboard. For a themed restaurant, that means the concept is designed as a system —tech sheets, costing, processes and KPIs— so it can be repeated in new locations, licenses or franchises without being diluted.

“A themed restaurant succeeds or fails based on achieving sustainable profitability, not on how much you invested in decoration. I've seen brilliant concepts broken by high overhead and others seemingly simple generating 30% EBITDA because they understood their unit economics from day one.”

FAQ
Frequently asked questions
How do I know my themed concept will have enough margin and I won't end up reinventing operations every year?
Financial modeling comes first: we simulate real prime cost (labor, COGS with local suppliers, overhead), deploy target average check per market, extract realistic EBITDA. We don't assume numbers from elsewhere. During consultation we audit every cost line before investing. If margin doesn't exist, better knowing now than eight months in. If it exists, you know exactly what occupancy you need and what not to reinvent.
Is it viable to replicate a successful concept from one location to another or is every themed restaurant unique?
Unique in narrative, standard in operation. Storytelling adapts to each location and public; recipes, processes, training, menu engineering replicate. That's how you grow. If each location reinvents menus, service standards, and metrics without templates, you don't scale: you multiply problems.
Where does the work start?
With the diagnosis, never with the concept. First we look at what is there: numbers, menu, operation and project stage. Only then is the themed restaurant's business model designed, and implementation supported through to expansion.
What happens to my concept and my brand?
They stay yours. The whole process runs under NDA, and neither the concept nor the brand nor the intellectual property changes hands at any point. Limited spots worldwide exist to guarantee real dedication to each project.
How much time does it take?
It depends on the scope agreed: diagnosis, model design, implementation and support during operation and expansion. A profitable themed restaurant is built in phases; anyone promising a result in one session is not selling method.
What does it cost?
Between USD $35K and USD $250K for the 1-on-1 consulting, priced to the scope of the project and the concept. Private programs for restaurant groups and chains are quoted separately.
My restaurant is already open — does this still apply?
It does, and it is the most frequent case. The work covers profitability, standardization of the operation and the plan to scale the concept to new locations or to franchise, starting from what already exists.
